The Research Center for Food and Restaurant Technology

Implementation of European principles of healthy nutrition for children in educational institutions of Ukraine

This direction of research is focused on the study and adaptation of European models of food organization in educational institutions in accordance with the main tasks of the reform regarding the development of a safe and healthy educational environment in the new Ukrainian school. The work of the scientific center is aimed at solving the scientific problem of creating technologies for food products with regulated nutrient composition for school-age children, in particular with special needs, which corresponds to the priority directions of the reform of the school nutrition system of Ukraine, which was initiated in 2019 by the First Lady of Ukraine Olena Zelenska, as well as modern topics of scientific projects of the European Commission, NATO, Codex Alimentarius, General Assembly of the United Nations.

The scientific team of the State University of Trade and Economics, together with specialists of the laboratory of prevention of food-dependent diseases of the State Institution "Institute of Public Health named after O. Marzeyev", specialists of the restaurant business of Ukraine have developed a collection of recipes for dishes, culinary products and drinks (technological cards) for the nutrition of school-age children for educational institutions, children's rehabilitation and recreation institutions, and institutions in the field of social protection, taking into account the new requirements of the Sanitary Regulations for general secondary schools of education (Order of the Ministry of Health No. 2205 dated 09/25/2020) and Rules and procedures for the organization of meals in educational institutions and children's health and recreation facilities (Resolution of the Cabinet of Ministers of Ukraine No. 305 dated 03/24/2021).

Scientists of the research center participate in the working group of the Ministry of Education and Science of Ukraine on the development of technological cards for culinary dishes and products for feeding children in educational institutions, food products for children with special dietary needs. The staff of the Department of Restaurant and Craft Technologies developed 104 technological cards for the production of culinary products in schools of Ukraine as part of the reform of school meals from the beginning of 2024.

One of the project areas of the Center's activities is the implementation of educational certificate programs to improve the professional skills of catering specialists who are engaged in the production of culinary products for schoolchildren, as well as consulting activities on menu development and modernization and design of technological processes in catering establishments taking into account the principles of HACCP, the order of organization food in educational institutions.


Innovative technologies of food products with regulated nutritional composition

In the conditions of the modern market, the production of high-quality, profitable, competitive products is impossible without the use of advanced technologies and innovative solutions in the field of providing people with food products. Innovations in the field of food and restaurant technologies are subject to the search for ways and means that ensure economic production and guarantee maximum safety and quality of food products.

The priority innovative directions in the field of food and restaurant technologies are the development of promising methods of processing, production, storage, and transportation of products; formation of mechanisms for the rational use of raw materials; development of new types of high-quality food products, in particular for people with special needs, improvement of methods of promoting products to the market.
